Does any know if you can put the America handlebars on the speedmaster? If so would the stock cables still work? I may get risers but the bars on the America are really comfortable.

Yes you can put America bars on the Speedmaster. You will need to change out the 3 cables to the America ones. I also used the stock America riser. You could use the Rivco risers. http://www.newspeedmaster.com/html/rivco_handlebar_risers.html I also added Jim's spacers to get a bit of rise and some pullback. http://www.spacerjim.com/TriumphAmer.htm? Great mod and very comfortable ride.

Is it hard to change out the cables?

Not at all, it takes a screwdriver and a 10mm wrench I think

I can't honestly answer that. My dealer did the mod as part of the deal when I bought my bike. It came out the door with all the work done.

I did it too with 4 1/2" risers and 1 1/2" pull back. I used BA cables and brake line.

myself i went the way of the America bars on the Speedy
sat then on top of a pair of Bonneville risers routed the accelerater cables to the right side of the frame moved the brake line to the right side caliper ,you can get away with the clutch cable the angles are a little tight tho,
now maybe i have long arms or i lean forward when i ride for me i car'nt see the need for up and pull back on these bikes
