#1. Would shimming the needles have anything to do with idle?
No, the engine runs off the air mix screw port and a little of the pilot jet at idle.
#2.When you turn out on the air mix screw are you bringing more air in or less
You are adding more fuel. It's a direct circuit to the float bowl not controlled by a jet.
#3 Will adding the hotter coils, plugs and wires affect where my jetting should be. in other words will I have to rejet or shim when I add the coils? Is it better to run a little rich with hotter coils?
Oy, such a question. The short answer is, no, you shouldn't need to adjust the fuel chain. A "hotter" coil will theoretically produce a better spark (assuming you upgrade everything in the electrical chain all the way to the plug) and with a well balanced carb input that should result in a more complete burn. The "hotter" spark does not produce more heat on it's own.
Now if you're asking about running richer to keep the motor cool that's another thing altogether and it is true with an air cooled motor a slightly rich mix will keep the motor a little cooler.
