Anyone ever try cutting the rear fender. I would like to take a couple inches off it, just not sure how it would respond to a blade. Maybe a grinder with a cutting wheel?

I've bobbed a couple of rear fenders with a good jig saw and a new metal blade and have gotten good results. Use a section of pinstripe tape to fair in your curve; I like to live with mine for a day or two since once cut there's no going back. Then mask the fender with blue painter's tape to protect from scratches and cut slowly along the pinstripe tape edge. Finish the edge with a file and you're ready for paint.

A positive attitude may not solve all your problems, but it will annoy enough people to make it worth the effort. Herm Albright (1876 - 1944)

I did the same, jig saw does a great job, then finish it with a file to get it flat.

I rough-cut mine with a mini-cutoff wheel. Then I trimmed and shaped with an angle grinder. But I'm also painting it. You didn't say whether you were repaining or not. If you don't want to repaint a nibbler might be the best thing -- little or no heat buildup.

Theres a bloke on eBay sells fibre glass short ones for Speedmaster, has the wiring in it to, so bolt on, add light, plugin electrics and go.

Any mods I am doing to my SPeedy are all reversable mind you, getting a HUGE amount of stuff in the shed now

If you have a Freak kit or some other airbox eliminator, the way to go is cut the leading edge and rotate the fender forward. This preserves the nice factory edge where you can see it. It's unfortunate that the airbox goes through the fender so you can't do this without eliminating it.
