The only way to tell for sure is to ride it. Shims richen the midrange throttle position, so if the bike feels sluggish from about 1/4 to 3/8 throttle, try adding a shim. Still feeling flat?, try another, but you have to ride to tell what effect you're having on the performance. Another thing to try for the idle/midrange is the idle mixture screws. Start at 3 turns out and see how it feels, although no more than 3 1/2 should be used, otherwise you should replace the idle jet (stock is 42, next size up is 45). Then close screw back to 2 1/2 and try again. Alot of trial and error, but without doing the whole dyno thing this is the only way. Hope some of this helps.
P.S. The jet calculator is a great tool, but you should consider the values as starting points, every bike is different, so each one needs it's own fine tuning
